Homemade Vegan Ramen

Ingredients:

10 cups food scrap veggie broth

1 package of rice noodles

1 head of cabbage

1 block of tofu

soy sauce

garlic powder

FCPEVOO

toppings: hemp seeds, sesame seeds, green onions

Directions:

Start boiling your veggie broth for the noodles, adding a little oil and salt. Cook according to package directions. Once noodles are cooked through, too take them out with a pair of tongs so they don’t overcook. Set aside. Change temperature of broth to low to keep warm. As you cook the noodles, dice your cabbage and cube your tofu. Sauté cabbage first with 1-2 tablespoons of olive oil, 1/4-1/2 cups of water and 2-4 tablespoons of soy sauce over medium heat until cooked through. Remove cabbage from pan and set aside. Add same amounts of oil and soy sauce to the pan again and brown tofu on all sides. Once ready, add cabbage back to pan and combine. Scoop noodles, cabbage and tofu into a bowl and ladle in the broth. Top with sesame seeds or green onions and enjoy!
